Required Ingredients :
Brinjal 8 (slite into 4),Gingelli oil,Peanuts 3 tsp,Cashews 5,Coriander Seeds 2tsp,Pepper 1/2 tsp,sesame seeds 2 tsp,Mustard 1/2tsp,Fenugreek 1/2tsp, Larg size finley chopped onion 3,3 medium size Tomato paste,some curry leaves,Crushed ginger garlic 1tsp,Chilli powder 2 tsp,Turmeric powder 1/4 tsp,Cumin powder 1 tsp,Tamarind juice of amla size,required amount of salt and some Coriander leaves.
Turn the oven on and place in a frying pan.Add peanuts, cashews, pepper, coriander seeds, sesame seeds and roast well for 2 minute in low falme.Then add a little water and grind to a paste.Then take the paste and set aside.
Pour 3 tsp oil in a pan, add brinjal and fry for 8 to 10 minutes in low flame.Then take the brinjal and set aside.In the same pan pour the 3 tsp oil and add the mustard and fenugreek.
Once fried add onion, curry leaves, crushed ginger and garlic and saute it well.Once the onion and ginger garlic paste is golden browned add the tomato paste and saute.
Now add chilli powder, cumin powder, turmeric powder, ground spice paste and required amount of salt and mix well.saute for few minutes.

At this point add brinjal and mixed well.Then add the tamarind solution. Add the required amount of water.Do not pour too much water.Only then will we get gravy Consistency.Put the stove on medium heat and cook for 5 minutes.Finally add some coriander leaves and turn off the stove.
